For Today . . .
Outside my window. . . it’s cold! There’s still snow on the ground from several days ago. Not enough to play in, just enough to be annoying. At 26 degrees this morning it feels more like February than November.
I am thinking. . . about how fortunate and blessed we are. Life isn’t easy but it surely is sweet.
I am thankful for. . . an uneventful weekend. No sick children, no ER trips. Just normal. But I’m really thankful for a husband who gets up early and goes out in the cold to work. We love you baby! Have a nice hot cup of hot chocolate while you’re out there today.
From the schoolroom. . . Just a few more days and the term is done. We’ll only have school Monday and Tuesday this week since Thanksgiving is Thursday.
From the kitchen. . . tea but nothing else yet. I’m hungry. Not sure about dinner yet but I do know I want to get those beans soaking for the big batch of bean soup I am going to make and freeze. And I need to go get more cabbage for another batch of sauerkraut.
I am wearing. . . a lovely Laura Ashely nightgown, a big fluffy blue bathrobe and slippers. Make-up and hair? You don’t want to know!
I am creating. . . I really can’t say.
I am going . . . to the post office, the dairy and JoAnn Fabrics for some sale items. But right now I am going to wake the sleepy heads, get dressed and make a big pot of oatmeal and coffee –in separate pots that is.
I am reading. . . nothing new again. Still going on the same books. Oh wait no that’s not true, I did add in the book Good Calories, Bad Calories: Fats, Carbs, and the Controversial Science of Diet and Health. It’s fascinating reading!
I am hoping. . . that the Suburban will start today –it wouldn’t yesterday. Don’t know why.
Around the house. . . orders to fill as again (thankfully!), bathrooms that need cleaned because I didn’t get to them over the weekend. Soup and sauerkraut to make (not together).
One of my favorite things. . . this warm fluffy robe I’m wearing. A Christmas present from Mom last year. Thanks Mom!
A few plans for the rest of the week. . . as always, RCIA, basketball practice, errands and shopping. Oh and of course cooking and eating . . . more eating than cooking on my part I’m sure.

All it means Chari is that my family members read here and I don’t want them to know what I am working on for their gifts. Really, there is no other meaning. Sorry to disappoint.

I’m interested to hear that you’re reading GCBC. It’s a long, hard read, but excellent. I got it for myself after several years of low-carbing and trying to explain it all to dh. He read it first and it totally convinced him of what I had been saying for years. He has changed his choices a lot since then. Of course, he has always been fit and healthy, and ate whatever I cooked or bought, but didn’t concern himself much about treats. Now he’s much more careful.
Anyway…all that is to say, I wondered how Type 1 diabetics fare on a strict low-carb, or (I prefer) “primal” diet without processed foods. I know there are some “low-carbers” that still have to wear an insulin pump, but it helps their numbers tremendously to stay away from all grains and sugars. I’ll be interested to hear your thoughts and what changes you make. I know it’s hard just to keep my non-diabetic children from eating what everyone else eats.
